Be sure to complete all sections, as incomplete information will delay reimbursement.

Mia Nonna Bistecca (My Grandmother’s Steak)

Just like Nonna used to make! Mia Nonna Bistecca (My Grandmother’s Steak) is a hearty, high-calorie meal that is great to make year round. If you’re making for friends and family without CF, the substitution chart below can help lower the calorie count for this dish.


18 oz. bone-in rib eye steak 1 package prosciutto
1 stick butter 1 pound fresh asparagus
2 Tbsp. olive oil 4-5 red potatoes
1 cup heavy cream Shaved parmesan cheese
1 egg Salt
1 Tbsp. each of sage, rosemary, and thyme Fresh ground black pepper


  1. Season the steak with pepper and place on grill. Add salt and olive oil to the steak after the first side cooks.
  2. Cut asparagus to shorten stalks.
  3. Pour olive oil into a pan. Crack egg into pan and fry. Add salt and pepper to egg while frying.
  4. Melt butter in a different sauté pan with herbs.
  5. Wrap bundles of four asparagus in prosciutto.
  6. Once steak is grilled, place in butter and herb pan. While in pan, douse steak in butter and herb mixture.
  7. Take steak out of pan and place asparagus in the steak pan.
  8. Cut steak up into pieces.
  9. Once prosciutto is cooked, place asparagus in plate with steak and cover asparagus with fried egg.
  10. MASHED POTATO SIDE: Cut potatoes into small pieces. Boil until soft. Add cooked potatoes, salt, black pepper, and heavy cream to a bowl. Add butter from previous pan to bowl. Shave parmesan cheese into the bowl and mix all ingredients together.


Below are easy substitutions you can make to lower the calorie count for this recipe when cooking for people without CF.
1 cup heavy cream 1 cup skim milk 738
1 stick butter Omit 810
Shaved parmesan cheese Omit 22
  • In step 6, sprinkle herbs on top of grilled steak, do not add steak to pan and douse in butter
  • In step 7, use a little olive oil instead to cook bundles of asparagus
  • In step 10, use skim milk instead of heavy cream. Do not add shaved parmesan
